I am slashing the loaves with a razor blade and loading them in the oven with a long handled peel. Before loading, the fire had burned down to coals. The coals were raked out, the hearth swept, and the door was closed for an hour to allow the heat in the bricks to even out. The temperature of the oven when I put in the loaves is about 700 degrees F.
