The flours, levain, salt and water are mixed in a large tub and left, covered, for 20 minutes. The dough is kneaded for about 10 minutes, then put in a container to rise for 4 hours. This batch of dough weighs about 22 pounds. This is a sticky dough because of the fairly high water content. This means that the bread will tend to have an open crumb.
